Candied Jalapeño Dip

Ingredients:

  • Candied Jalapeños (these are the ones I use)
  • Block of cream cheese
  • Wheat Thin Crackers

Directions:

  • Put Cream Cheese on a plate
  • Pour Candied Jalapeños over cream cheese
  • Serve with Wheat Thins

Queso

Ingredients:

  • 1 32 oz Velveeta Cheese
  • 2 cans Rotel
  • 1 can mushroom soup

Directions:

  • Put slow cooker liner in 6-8 quart crock po.t
  • Cut cheese up into 1 inch blocks and put in crock pot.
  • Add both cans of Rotel
  • Add mushroom soup
  • Cook on high for 1.5-2 hours until cheese is melted completely. Stir every 30 min until finished.

Ham

Ingredients:

  • Spiral Ham (I usually always get mine from Costco) I throw away the glaze that it comes with!!!
  • 2 large cans of sliced pineapple

Directions:

  • Heat oven to 250 degrees
  • Put Ham into a large black oval roaster with lid. Put the cut side down.
  • Pour Pineapples and juice over the top.
  • Bake according to how many pounds on instructions. Usually 2-3 hours depending on the size go the ham.
  • Baste Ham with pineapple juice every 30 min.

Green Bean Wraps

Ingredients:

  • 4 cans of whole green beans drained
  • 1 pound bacon cut in half
  • 1/2 cup butter, melted
  • 1 tsp garlic salt
  • 1 cup of brown sugar
  • 1/2 tsp Worcestershire sauce
  • toothpicks

Directions:

  • Preheat oven to 350 degrees. Grease a 9×13 in baking dish
  • Microwave bacon for just a few min (not until done). This helps make the bacon more crispy. I usually cook half way approx 3-4 min
  • Wrap a bundle of green beans between 7-8 with bacon. Use a toothpick to hold in place.
  • Combine butter, brown sugar and Worcestershire sauce pour over the top of the green beans. Then sprinkle them with garlic salt.
  • Bake 25-30 min until bacon is crispy 

Sweet Potato Puff

Ingredients:

  • 3 cups or 1 large pan of cooked mashed sweet potatoes
  • 1 cup of sugar
  • 1/2 cup of melted butter
  • 1/2cup of milk
  • 1tsp salt
  • 2 eggs
  • 1 tsp vanilla

Topping:

  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1/3 cup butter (melted)
  • 3tbsp flour

Directions:

  • Mix all ingredients, pour into 9×9 pan 
  • Mix all the ingredients for the topping in a separate bowl
  • Put the topping on top of the sweet potato mixture
  • Bake at 325 degrees for 45min

Corn Casserole

Ingredients:

  • 1 package of Hidden Valley Ranch Dip Mix
  • 1 16oz sour cream
  • 2 boxes of Jiffy Corn Bread Mix
  • 2 cans cream style corn
  • 2 cans whole kernel corn, drained
  • 1/4 cup butter, melted
  • 2 eggs
  • Shredded cheddar cheese to taste ( I mix approx 8oz into mix and use the rest of a large bag to top the casserole)
  • Salt & Pepper to taste

Directions:

  • Mix all ingredients until well blended
  • Pour into 13×9 pan that has been sprayed with cooking spray
  • Bake at 375 degrees for 45 min or until brown
  • Sprinkle with more cheese after removing from the oven 

Green Bean Casserole

Ingredients:

  • 2 cans green beans, drained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 can French fried onions
  • 1 teaspoon soy sauce
  • 1 dash of black pepper
  • 1/2 cup of milk

Directions:

  • Stir green. beans, soup, milk, black pepper, soy sauce and 2/3 cup onions in a 1 1/2 quart casserole dish
  • Bake at 350 degrees for 25 min or until mixture is hot a bubbly
  • Take out of the oven stir bean mixture and add remaining onions
  • Bake for 5 min or until onions are golden brown

Homemade Mashed Potatoes

Ingredients:

  • 3 lbs of red potatoes (I prefer to keep the skin on)
  • 4 slices of bacon
  • 1/2 cup butter
  • 1 (16 ounce) container of sour cream
  • 1 cup of shredded cheddar cheese
  • 1 cup of potato water (reserve after boiling)
  • Salt and Pepper taste

Directions:

  • Cook bacon until crispy, dry with pepper towels, let cool
  •  Dice potatoes to about 1/2 in – inch pieces
  • Place potatoes in a large pot of water, add a pinch of salt and boil until tender. Usually about 20 min.
  • Reserve 1 cup of the potato water before draining.
  • Drain potatoes. 
  • Mash butter into the potatoes add 1 tsp of potatoes water, and sour cream. Add potato water slowly if needed to achieve the consistency you prefer! Crumble bacon into the potatoes, add cheddar cheese and stir. 
  • Season with salt and pepper to taste

Caesar Salad

Ingredients:

  • 1 head of Romain Lettuce
  • 1 can of black olives
  • 1 can of water chestnuts
  • 1 6oz bag of shredded parmesan cheese
  • Croutons 
  • Caesar dressing (my fav is Ken’s Steakhouse Creamy Caesar)
  • Salt and Pepper to taste 

Directions:

  • Wash & Chop Romaine Lettuce
  • Put lettuce in a large bowl
  • Drain olives and add to bowl 
  • Drain water chestnuts and add to bowl
  • Add parmesan cheese to taste (I use all 6 oz)
  • Add bag of croutons
  • Add Caesar dressing and Salt and Pepper to taste 
  • Toss & Serve

Watergate salad

Ingredients:

  • 1 (3.4 ounce) package of instant pistachio pudding mix
  • 1 (8 ounce) can crushed pineapple, with juice
  • 1 cup miniature marshmallows
  • 1/2 cup chopped walnuts
  • 1/2 (8 ounce) container frozen cool whip, thawed  

Directions:

  • In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in whipped topping. Chill

Cinnamon Cheesecake

Ingredients:

  • 2 (8 ounce) packages of cream cheese, softened
  •  1 cup of white sugar
  • 1 tsp Mexican vanilla extract
  • 2 (8 ounce) cans refrigerated crescent rolls
  • 3/4 white sugar
  • 1 tsp ground cinnamon
  • 1/2 cup butter, room temp
  • 1/4 cup honey

Directions:

  • Preheat oven to 350 degrees. Prepare a 9×13 in baking dish with cooking spray.
  • Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth.
  • unroll the cans of cresent roll dough, and use a rolling pin to shape each piece into 9×13 in rectangles. Press one piece into the bottom of baking side. Evenly spread cream cheese mixture into dish, then cover with remaining piece go dough. Stir together sugar,  cinnamon, and butter. Dot mixture over top of the cheesecake.
  • Bake until crescent dough has puffed and turned golden brown, about 30 min. Remove from oven and drizzle with honey. Cool completely before cutting.

Pecan and Pumpkin Pie

Honestly, I have never really tried to make pies! So I buy these at Costco! They have the best ones that are huge!
