1 tsp minced garlic (I like to use the jarred kind!)
Directions:
Put all the ingredients in the crockpot on low for 8 hours. Save a few pieces of the bacon to cook and crumble on top before serving.
Corn Casserole
Ingredients:
1 package of Hidden Valley Ranch Dip Mix
1 16 oz sour cream
2 boxes Jiffy Corn Bread mix
2 cans cream style corn
2 cans whole kernel corn, drained
1/4 cup of butter
2 eggs
2 cups of shredded cheddar cheese divided
Salt & pepper to taste
Directions:
Mix all ingredients until well blended. Except for 1 cup of cheese. You can really use as much cheese as you would like! Pour into 13×9 baking dish that has been sprayed with cooking spray. Bake at 375 degrees for 45 min or until brown. Sprinkle with the remaining 1 cup of cheese after removing from the oven.
Sweet Potato Puff
Ingredients:
3 cups of cooked mashed sweet potatoes
1 cup of sugar
1/2 cup of melted butter
1/2 cup of milk
1 tsp salt
2 eggs
1 tsp vanilla extract
Topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup butter (melted)
2 tbsp flour
Directions:
Mix all ingredients. Pour into 9×9 (or larger) pan.
Mix all topping ingredients. Put on top of mixture in the pan and bake at 325 degrees for 45 min.
Cooked Spinach
Ingredients:
1 pkg fresh spinach
1 yellow onion
4 slices of bacon
2 tbsp of minced garlic
2 tbsp olive oil
Directions:
Dice onion and garlic (I like to use the already minced garlic in a jar0. I buy the giant one at Costco! Heat olive oil in a large skillet. Sautee the onions and garlic until the onions are soft. Add Spinach cook for 1-2 more min until spinach is wilted.
